Everyone in coffee fears the rain. We wait for it. Rain-roasted coffee is what the August sky is about to dictate to us — and it won't taste like anything you drank this summer.
June burned. 35.3°C in Uccle, the hottest day of the year. July stayed dry and anticyclonic. But Belgian forecasters are already writing something else for August: Atlantic fronts finding their way back to Europe, more wind, more cloud, rain. Summer is turning. And with it, the recipe in the cup.
Why rain-roasted coffee tastes different
At Meteo Koffie we don't roast under a roof. Golden burns outside, in full view, in the air of the market. When rain hits the hot metal, the steam rises differently, the temperature at the bean's surface fights the cold damp around it, and the beans feel it first. The heavy, rain-soaked air enters the batch. The result isn't a "better" or "worse" coffee — it's a coffee you can't repeat. Deeper, earthier notes, a roundness a dry day never gives.
That's the whole difference between roasting and manufacturing. An industrial line makes the same taste in January and in August. We make the taste of the day. The sky signs every bag.
Brazil fears the rain. We sign with it.
There's a beautiful irony in what's happening right now. In Brazil, rainfall nearly 2000% above the historical average has delayed the 2026/27 harvest and pushed arabica prices up more than 16% in a single month. For the big plantations, rain at the wrong moment is a threat — beans that won't dry, fields you can't work, prices spinning out.
For us, rain isn't an enemy to manage. It's a co-author. The same water that scares the world markets is the water that, at the Marché de l'Abattoir, chisels a batch the way no one makes them anymore. We don't run from the unpredictable — we live on it. That's why no bag is like another, and why whoever caught the right batch knows they won't find it again.
What the sky writes in August
If the forecast holds, August weekends will be the battle zone: thermal contrast, wind dancing with the smoke, maybe a burst of rain across Golden mid-roast. Out of that conflict comes the wildest coffee of the season. We don't schedule it. We receive it.
