Roasting coffee by feel: why Golden never watches the clock

Roasting coffee by feel means one thing: nobody hits „start" on a timer and walks off for a coffee while the machine works. Golden stays next to the drum, outdoors, at the Marché de l'Abattoir, by the exit of the Manufakture car park, in Anderlecht. He reads the lot by eye, by nose, by ear. Not on a screen.

In 2026 that has become almost a curiosity. Here is why we hold on to it.

On paper the trend looks clean. The newest roasters measure bean density, moisture and colour, and an algorithm nudges the heat as it goes to pull the exact same taste, batch after batch. Guaranteed consistency. In mid August, an industry piece argued, rightly, that where and when coffee is roasted matters more than most drinkers realise. Except the industry draws the opposite conclusion: if place and moment break repeatability, take place and moment out of the equation. A roof, a machine, a saved profile. No more surprises.

We do the exact opposite.

Roasting coffee by feel, when the sky changes the rules

A saved profile works in a closed workshop, where the air never moves. Outdoors there is no such thing. In the morning the bean goes in cold and damp. By noon the north wind turns the smoke and steals heat. Pressure drops, the air grows heavy, and the same fire gives something else. A fixed curve would lie. The senses do not.

That is why Golden does not roast by the clock, but by what is happening in the drum right now.

What he sees, hears and smells

The eye follows the colour. The bean moves from green to straw yellow, then to cinnamon, then to the warm bronze we want. The smoke, thin and almost invisible at first, thickens and changes its smell: bread, then caramel, then wood just starting. The ear waits for the crack. First crack is the real clock of roasting, a sound you hear in the wind, not on a display. When the cracks spread out and the smell says „now", Golden drops the lot. A second sooner or later, it is a different bean.

None of this copies from a file. It is read on the spot, once.

An AI machine promises you that today's lot will be identical to the one from three months ago. We promise you the opposite. Saturday's lot carries Saturday's weather. Sunday's, another sky, another taste. Not because we could not do the same, but because we will not. The sky writes the recipe, and we let it show in the cup. It is also why we roast only on Saturday and Sunday, at the market, in front of you. Not in a warehouse, three weeks earlier. Roasting by feel needs someone present, not a profile running overnight. What it means for your bag

You are not buying „a product". You are buying a lot from one particular day, with its hour and its weather. Fresh beans need a few days of rest after roasting, then they open up. You grind them when you brew, not before. And you drink them knowing that Saturday will not come back.
