Our Story

TURNING A COFFEE BEAN INTO A STORY Transparency, from the green bean to the cup. It is not our slogan. It is the promise we make to every customer. Meteo Koffie is a Belgian specialty coffee brand created from the desire to restore people’s trust in a product they enjoy every day. We live in a world where we know less and less about what we drink. Too often, coffee reaches the cup without anyone knowing when it was roasted, who roasted it, or what happened between the green bean and the moment it was brewed. We chose a different path: to open up the process and make it visible. At Meteo Koffie, coffee is not hidden behind factory walls. It comes to life in front of people. Meteo Koffie was founded by Laurent and Lily Pas, two people with different professional backgrounds, united by the same belief: transparency builds trust. Laurent has spent more than 35 years building businesses and promoting natural and environmentally responsible products. Throughout that time, he learned that a quality product should not simply be sold. It should be explained, demonstrated and understood. Lily, a former school principal, devoted her career to education. For her, every encounter is an opportunity to learn something new and to share knowledge. Together, they created Meteo Koffie not simply as a coffee roastery, but as a place where people can see, smell, listen and understand how a green coffee bean becomes a cup of coffee. We created Meteo Koffie to give coffee back the story it deserves. We believe every cup has a history, an origin, a journey and a transformation, and that every customer has the right to know that story. In a world where almost everything is produced behind closed doors, we chose to open the doors of the roastery. We believe trust is built when people can watch the process, ask questions, touch the green beans, hear the first crack, experience the aromas changing during the roast and taste freshly roasted coffee. This is the essence of Meteo Koffie.

The name “Meteo” refers not only to the weather, but also to the reality in which we work. We roast outdoors, beneath the Brussels sky, in the morning light, on sunny, windy, cold and warm days. We do not hide nature. We invite it to become part of the story. From this philosophy came WEATHERROIR™, the system through which every batch is documented together with the weather conditions at the time of roasting. We do not claim that the weather miraculously changes the taste of coffee. We simply believe that every batch deserves to preserve its identity and the context in which it was created. We believe freshness matters. We believe transparency matters. We believe people value authenticity. We believe good coffee begins with respect for the green bean and ends with respect for the person drinking it. We believe the experience is just as important as the product, and that the best conversations often begin over a cup of coffee. Our mission is to offer individuals and companies an authentic freshly roasted coffee experience, built on transparency, education and respect for every stage of the process, from the green bean to the cup. Our vision is to become a European reference for live coffee roasting experiences and artisanal coffee built around transparency. We do not want to be known only for the quality of our coffee. We want people to say: “If you truly want to understand coffee, go to Meteo Koffie.” Our values are transparency — everything we do should be visible, explainable and understandable; freshness — coffee is a living product and deserves to be enjoyed at the right moment; authenticity — we do not create artificial settings, we roast where people can see us; education — every customer should leave knowing more about coffee than they did before meeting us; respect — for the work of the farmers, the raw material, the roasting process and every customer’s time; and community — because a cup of coffee can create relationships, conversations and memories.

Our promise is simple. We do not claim to have the best coffee in the world. We promise something we can prove every day: you will see the coffee being roasted, you will understand the process, you will discover the story behind the batch, you will taste the coffee when it is truly fresh, and you will always know what is in your cup. Because at Meteo Koffie, transparency from the green bean to the cup is not a marketing strategy. It is the way we work.
